Holiday gifting for my amazing colleagues who teach middle school with me consisted of frozen cookie dough packaged in a pretty dish towel from Crate and Barrel.
Teachers especially get overloaded with sweets before the holidays, so my hope was that my friends could pop these in the oven whenever they’d like. These gifts also went to my children’s teachers, as well as gift cards.
Peanut Butter Oatmeal Chocolate Chip Cookies
recipe adapted for high altitude from brown eyed baker
1 cup + 2 Tbs all-purpose flour
3/4 teaspoon baking soda
1/4 teaspoon salt
1 stick unsalted butter, softened
1/2 cup creamy peanut butter
1/2 cup -1 teaspoon granulated sugar
1/3 cup brown sugar
1/2 teaspoon vanilla extract
1/2 cup rolled oats (not instant)
1 cup semisweet chocolate chips
Combine flour, baking soda, and salt. Cream butter, peanut butter, sugars, and vanilla. Add the egg and combine. Gradually add the dry ingredients until just combined. Add the oats and chocolate chips. Scoop cookie dough onto a silpat lined sheet and freeze or bake at 350 for 10 minutes.
If baking frozen dough, add 2 minutes to baking time.
