customizable cookie bars


One of the quickest and easiest desserts to come out of my kitchen is these cookie bars. One bowl, pantry ingredients I always have on hand, one pan, and 20 minutes in the oven is all I need. I mixed peanut butter chips and dark chocolate chips into these bars, but anything you fancy can be a mix-in: toffee pieces, candy pieces, nuts, coconut flakes, you get the idea.

Customizable Cookie Bars
1 cup + 2 Tbs all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup packed brown sugar (I use a scant 3/4 cup for high-altitude)
1/2 cup softened butter
1 teaspoon vanilla extract
1 egg
1 1/2 to 2 1/2 cups mix-ins:  chocolate chips, peanut butter chips, white chocolate chips, toffee pieces, nuts, candy, etc.

Preheat oven to 375
Grease and flour a 9″ baking pan
Combine dry ingredients, set aside
In a mixer, combine sugar, butter, and vanilla
Add egg and combine
Gradually add dry ingredients until combined
Stir in mix-ins
Bake 20 – 23 minutes
Cut into 9 medium or 16 small bars
