I first fell in love with corn salsa here. Side note: I would really love to have a Chipotle closer than 70 miles from my house. My simpler version uses a diced bell pepper instead of a roasted poblano. It is simple, fresh, and I know your family will love it, too.
3 to 4 cobs corn, cooked and cut from the cob (or one bag frozen corn)
1/3 cup finely diced red onion
1/3 cup finely diced red bell pepper
1/4 cup minced cilantro
1 to 2 jalapeno peppers, seeded and finely diced
juice of 2 limes
salt to taste
